I love making this herbed potato salad as side dish in the spring and summer time. It’s full of flavours with fresh seasonal herbs.
You can enjoy this salad chilled or at room temperature. It’s very versatile and can be use as sandwich topping or just on its own. Enjoy it!
Herbed Potato Salad
The perfect potato salad dish with lots of fresh herbs, grainy mustard and seasoning.

Ingredients
POTATO SALAD
- 2 pounds white or red new potatoes - small size
- 1 tablespoon sea salt
- Chili flakes – for topping
DRESSING
- ½ cup olive oil
- 3 garlic cloves – roughly chopped
- ½ tsp sea salt
- ÂĽ tsp black pepper
- 2 cups fully packed basil leaves
- ÂĽ cup dill
- Juice of lemon
- 1 Tbsp grainy Dijon mustard

Bring a large pot of water to a boil over high heat. Place the washed potatoes and the salt in the pot and let it boil for 10 minutes. Reduce the heat to medium and simmer covered until the potatoes are fork tender. About 15-20 minutes.

Meanwhile in a food processor or a blender mix all the ingredients for the dressing. Process until the dressing becomes creamy and smooth.

Drain the potatoes. Once cooled cut them in halves and transfer into a deep bowl.

Pour the dressing over top and toss to mix. Serve right away as a side dish!
